Tyler's family birthday party!

I am kinda ashamed to say that Tyler had 3 birthday parties this year. I know, he's WAY too spoiled but I guess that's what happens when he has so much family. The first party was with his friends, the second was with his dad and family, and the third was with my family. Here are the pictures of our family party :)

Yummy Dinner

Basil-Orange Pineapple Chicken
I made this for dinner last night and it was so yummy that I thought I would share the recipe. Try it out and let me know what you think!


Basil-Orange Pineapple Chicken

1 medium fresh pineapple
1 tsp butter
4 skinless, boneless chicken breasts
1 tsp vegetable oil
1 small red bell pepper thinly sliced
½ cup frozen pineapple orange juice concentrate – thawed
½ cup white wine
2 tbsp Dijon mustard
1 tsp onion powder
½ tsp cornstarch
1/2cup minced fresh basil leaves
½ tsp black pepper
2 oranges peeled and sliced (opt)

Twist crown from pineapple. Cut pineapple in half lengthwise. Refrig. other half. Cut fruit from shell, then crosswise into thin slices. In nonstick skillet, saute pineapple in butter until lightly browned. Remove.

Pound chicken lightly until even thickness. Season with salt. Brown chicken in oil. Cover, simmer 6 minutes, remove.

Saute red pepper in same pan. Combine juice concentrate, wine, mustard, onion powder and cornstarch; stir until blended. Add to pan. Cook, stirring, until sauce boils and thickens. Add chicken, basil and black pepper to sauce. Spoon sauce over. Add oranges; heat through. Place pineapple slices on platter, put chicken on top, spoon sauce with red peppers over chicken. Add oranges if you want.

Tyler's First Soccer Game!

Tyler hated going to his practices so I was convinced this was going to be a HUGE waste of money. However, once he started playing his games he started to love the sport! He played so well and made 3 goals that day. Hallelujah its not going to be a waste of money after all!

Tyler's 6th birthday party - September 5, 2009

We had Tyler's birthday party several weeks early this year so it would still be hot enough to have a swim party. His actual birthday is on September 25th but we celebrated it with his friends on September 5th. Tyler picked out an "Army" theme and aside from swimming we had a pinata, squirt guns, water balloons, and a slip n' slide. About 10 kids showed up which is more than I expected for it being a holiday weekend.

Deke spent quite a bit of time filling up water balloons and the kids went through them in minutes.

I don't know why Tyler tries to look evil in pictures...he does a good job at it though lol..


I had other plans for this cake however, cake mixes now come with pudding in them so it was really hard to decorate a cake that was SO moist. It was very frustrating.
