One Fabulous Recipe

Asian Chicken Wraps, Ribboned with Zucchini and Carrots Drizzled with a Honey Teriyaki Glaze. BBQ'd to perfection. Yum.



Recipe:

Glaze: Chicken Rolls:
3 tbsp honey 12 chicken tenders (about 1 1/2 lbs)
2 tbsp soy sauce 1 tbsp Asian Seasoning
1 tbsp rice vinegar 2 tbsp soy sauce
1 garlic clove, pressed 2 large carrots
1 tbsp Asian seasoning 2 medium zucchini

Preparation:

- Add all glaze ingredients in mixing bowl and microwave for 1-2 minutes or until slightly boiled and thickened.
- For rolls, flatten chicken to an even 1/4 inch thickness with meat tenderizer.
(I cut 4 chicken breaks into 3 strips to make my "tenders")
- Combine chicken strips in a bowl with soy sauce and Asian seasoning, stir until all pieces are evenly coated.
- Cut carrots and zucchini into long ribbons using a vegetable peeler. (12 each)
- For each roll, stack a wide carrot ribbon, zucchini ribbon, and chicken tender. Roll up and secure with tooth pick.
- Then cook a batch of rice. I used all the extra vegetables along with green onions in the rice to give some extra flavor.
- Finally toss those bad boys onto the BBQ for about 6 minutes on each side or until chicken is completely cooked through.
- Once done place them over rice and drizzle them with your pre-made glaze.

*I think next time I make these I'm going alter the sauces a bit. Maybe add some sesame oil, ginger-root, and other spices to give it more kick. Its a really easy and fun recipe that will impress your friends and family!

First day of 2nd grade!

Today was Tyler's first day of 2nd grade!
Tyler was excited about entering the second grade until he found out who his teacher was, then he was terrified! When he found out he called me at work on the verge of tears saying, "I have Mr. Cowen and he's the meanest teacher in the entire school!". The morning of his first day I got him up, made him pancakes, and gave him a pep talk. I explained that he shouldn't be judgmental and should give Mr. Cowen a fair shot. Besides, normally when children think a teacher is "mean" its because they are good teachers who mean business.
Once he got to class and saw his favorite friend Madison (girl in the bottom picture) he forgot all about being scared. He was then excited to be in class with his friends again. I called him after school and asked him what he thought about Mr. Cowen, his response: "He is the nicest teacher! The best in the entire school!". The lesson today is not judging a person based off rumors, get to know them yourself and create your own opinion!

Ward Camp Out

Last weekend we went on a ward camp out at Camp Nauvoo up in Placerville. Its a quaint little piece of land that our stake owns and we have camp outs there almost every year. Next to the site there is a little river that's dammed off and they have these boards that you can stand on and move along with a long stick. It was so cute seeing Deke and Tyler paddling along, I went to grab my camera and lo and behold, DEAD BATTERY! So I snapped a few pics with Deke's camera phone. Next year I'll be more prepared!

Family Reunion 2010

THE FIRST EVER LARSON FAMILY REUNION IN UTAH!

At the Joseph Smith Memorial Building.
I even found some girlfriends in Utah! Lindsay and Sara :)

This was the day I got my endowments out at the SLC temple.
I was told that we have 91 descendants just from my grandparents, Blaine and Luana Larson. This is part of them...not everyone was able to make it. We still have a great turn out!

Blog Update

Oh my gosh has it really been 2 months since I've posted to my blog?!? Wow! I guess I've been really busy... here's the skinny on the past two months... Tyler had his first PGY show (performing groups for youth), baseball season came to an end today and we celebrated with a pool party at my house, we hiked Horse Tail Falls on Memorial Day, and Deke discovered his newest obsession - KARAOKE!
